EASY RECIPES: Open-face Chicken Caprese sandwiches

Hey friends! How are you doing today??
I'm back today to share the recipe I promised in my previous post.
Yesterday, I posted a real quick and easy recipe for Homemade Mac and Cheese.

Today, I'll share Part 2: 

Open-face Chicken Caprese sandwiches.
Total time: 25 mins. Serves 4.
(From Real Simple recipes)


Ingredients

  • 4 Boneless chicken breasts
  • Salt and pepper
  • Olive oil
  • 8 slices country bread
  • 3 Tomatoes, sliced
  •  8 oz. sliced mozzarella
  • Basil
Instructions

#1 Split 4 6-ounce boneless chicken breasts horizontally. Season with salt and pepper.


#2 In batches, cook in olive oil in a large skillet over medium-high heat until cooked 
through, 2-3 mins per side


3# Top 8 slices country bread with, chicken,
sliced tomatoes...


and a slice of mozzarella.


#4 Broil until the cheese is melted, 3-5 mins


#5 Sprinkle with basil


#6 EAT!!!!

EASY RECIPES: Homemade macaroni and cheese + open face chicken caprese sandwiches

Hey friends!!!!

My mom-in-law Jens and I are at it again!
Yes! This time we got together to make a super quick, super easy, super yummy meal:

Homemade Mac and Cheese
+
Open Face Chicken Caprese Sandwiches

 Homemade Mac and Cheese


INGREDIENTS




  • 1 1/2 cup elbows cooked as directed in package (al dente)
  • 1/4 cup butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup flour
  • 1 3/4 cup milk
  • 8 oz. shredded sharp cheddar cheese

    INSTRUCTIONS

    #1 Melt and stir butter, add salt and pepper (you can add to taste =).

    #2 Stir in flour, cooking over low heat until bubbly. Remove from stove. 



    #3 Slowly stir in milk. Return to a boil.

    #4 Add cheese. With wooden spoon, stir in cheese to melt.



    #5 Add melted cheese to cooked macaroni.



    #6 Transfer the mix to a 2 qt. baking dish lightly coated with cooking spray



    #7 Bake at 375 degrees for 35-40 mins. (until browned at the edges)




    #8 EAT!

    I'm so excited I finally learned how to make homemade mac and cheese! (specially for my little  kiddo... and the big kiddo, too ;) Since it's not a popular meal in Argentina, I had no clue how to make it!

    Woot woot!

    Recipe exchange link party!

    Well, today is a recipe exchange day!

    First of all, I have to say that I'm not the best cook in the world...
    This is so sad since my mom and mom-in-law are absolutely wonderful cooks


     (howcomeIdidntgetthosegenes!)


    Anyways, thanks to my mama-in-law Jens, I was able to post a couple of recipes, and there's a particular one that I'm very proud of because it turned out just FANTASTIC!

    EASY RECIPES: Chimichurri , babe!!!

    I'm so excited to introduce my wonderful sister-in-law Tracey to y'all.
    She's an amazing sister, friend, wife, mom of 3, musician and one of the most hilarious people I know! =D

    So, back to the chimichurri recipe... hmmmm... it tasted and smelled just SO GOOD! I can't wait to marinate some meat with it and grill out some yummy steaks! (I'm an argentine, I can't help but eat great amounts of meat =D)

    Here's the recipe to an amazing CHIMICHURRI! thanks Tray Tray! =)


    Ingredients:


    • One bunch of fresh Italian parsley
    • 1/2 cup olive oil (or more if it's too chunky)
    • 1/3 cup red wine vinegar(or more to taste)
    • One bunch of fresh cilantro
    • 5-6 garlic cloves, peeled
    • 3/4 teaspoon dried crushed red pepper
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper

    • Blend in a food processor and season to taste:))

    EASY RECIPES: Zucchini Day #2: Stuffed zucchini

    Hi there, friends!
    So yesterday, we let our imagination loose and tried a new zucchini "recipe"
    ( it was more like:  
    *hey lets make stuffed zucchini! 
    *OK Great! Yeah! ... hhhmmm what should we put in it?
    *I don't know... what do we have in the fridge?? =))

    So we came up with our own interpretation of what a stuffed zucchini should be like, taste like and look like.

    ... cause sometimes, you need to toss your recipe out the window and just have fun... go with your gut, try something new... SPONTANEOUS is one of my favorite words these days, and that's how we were feeling yesterday! =)

    So back to cooking mode

    Here we go with our recipe #2: Japanese style stuffed zucchini



    Ingredients: 

    • 6 zucchinis
    • 1 red pepper and 1 green pepper (we didn't use them this time because someone in our family is "emotionally" allergic to it (coughcough deanstein), but if you have them and you like them, go for it!)
    • 3 cups rice (amount varies according to amount of people you're cooking for)
    • 2 onions (medium size)
    • 8 oz (small pack) mushrooms 
    • 3 cloves of garlic 
    • Olives (as many as you like)
    • Mozzarella and Parmesan Cheese
    • Olive oil
    • 4 tablespoons teriyaki sauce
    Instructions

    #1 Prepare rice

    #2 Chop onions, (peppers), mushrooms, garlic, parsley (if you have fresh-from-your-garden parsley, that's the best!) and olives.

    #3 In a pan, saute onions and peppers first. After 3-5 mins, add mushrooms.




    #4 When the mix is about ready, add parsley and garlic. Saute for about 1-2 mins and turn stove off. (If you cook garlic for a long time, it gets bitter). After everything is cooked, add rice, olives and teriyaki sauce to the mix (you can use as much as you like =). Let it cool.

    #5 Cut your zucchinis in halves. Scoop out the insides.



    #6 Using a brush, coat the zucchini "boats" with a little bit of olive oil.

     #7 Stuff your zucchinis with filling, and cover with cheese.


    #8 Bake them 30-45 mins.


    #9 Unbuckle your belt

    #10 EAT!!


     So that's how you make it, and this is how you eat it...







    lizz, we miss you and wish you were here!! but at the same time, we're so proud of you for being the hands and feet of Jesus to those in need. We love you, girl!

     No matter what you're eating, either a fancy meal or bread and water, FAMILY and FRIENDS always make food taste much better!!

      EASY RECIPES: Zucchini DAY #1 : ZUCCHINI BREAD

      I was telling my absolutely awesome mother-in-law Jenny ;) how clueless I was on what to do with all the zucchini we're getting from our fruitful garden, when she suggested to try making zucchini bread. So we got together last Wednesday and made it! It was just SO FUN! 



      When I got to her house, she had a recipe and all the ingredients ready to start! My sister-in-law Sarah joined us and we all had a precious afternoon together. The bread? Absolutely DELICIOUS!!! It turned out just perfect!
      Let's do it!

      ZUCCHINI BREAD


      that's lovely uncle Chris with my little princess =)


      Ingredients:
      • 2 2/3 cups sugar
      • 2/3 cup shortening ( I used 1 1/2 sticks of butter instead: turned out delish!)
      • 3 cups shredded zucchini ( about 2 medium). 
      • 2/3 cup water
      • 4 eggs
      • 3 1/3 cups all-purpose flour ( Personally, I did 2 cups all purpose flour; 1 1/3 cups of wheat flour)
      • 2 teaspoons baking soda
      • 1 1/2 teaspoons salt
      • 1 teaspoon ground cinnamon
      • 1 teaspoon ground cloves
      • 2 teaspoons vanilla
      • 1/2 teaspoon baking powder
      • 2/3 cup coarsely chopped nuts
      • 2/3 cup raisins

      Instructions
        #1 Heat oven to 350 degrees. Grease bottoms only of 2 loaf pans, 9x5x3 inches. 



        #2 Mix sugar and shortening (or butter) in bowl.

        #3 Stir in zucchini, water and eggs. 
         


        #4 Mix in flour, baking soda, salt, cinnamon, cloves, vanilla and baking powder; stir in nuts and raisins. 

        #5 Pour into pans. 

        #6 Bake until wooden pick inserted in center comes out clean (60-70 mins). 



        #7 Cool 5 mins. 

        #8 Loosen sides of loaves from pans; remove from pans.


         
        #9 Cool completely before slicing. 


        #10 EAT!!!! =D






        The best part of making this bread was to be able to share it with my awesome family!!
